Greek Salad Skewers

ingredients
- one-quarter English cucumber
- kosher salt & freshly ground black pepper
- 1⁄4 lb feta cheese, cut into 16 small cubes
- 8 pitted kalamata olives, halved
- 8 ripe cherry tomatoes, halved (or grape tomatoes)
- 2 tablespoons extra virgin olive oil
directions
- Cut four 1/2-inch-thick diagonal slices from the cucumber and then quarter each slice. Set the cucumber pieces on a large serving platter and season with 1/4 teaspoons each salt and pepper.
- Top each with a piece of feta and then an olive half. Stab a toothpick through a tomato half and then thread through one of the cucumber stacks, pushing the toothpick down to secure it. Drizzle with the olive oil, sprinkle with some more black pepper, and serve.

What a lovely little appetizer these make. I added a little red wine vinegar to the drizzle, and used a mixture of black and green kalamatas. (I didn't even know they made green ones until I saw them at the olive bar. They're good!) I made a big batch, and have been snacking on them for a few days now. Wonderful recipe.

Simply delightful Marra darlink! I used the best ingredients and great olive oil for a superb appetiser for friends last night! I also added a little fresh oregano from the garden, added it to the oil before dousing the little Greek Sticks! I used all the ingredients as listed for a truly wonderful and yet so simple pre-dinner nibble! Made for the Whine and Cheese Gang and ZWT6. Merci encore. FT:-) (Photo to be posted)

Easy and delicious, and the cute presentation is wonderful! The only challenge I had was to make sure I was gentle with the feta cubes or they split down the middle (apparently I like to spear things ha!) I also found it easy to prep in advance and then plate and drizzle with oil and pepper just before serving. Thanks for sharing!

I absolutely adore Greek flavours so this is a new favourite for me! It looks colourful and tastes wonderful. Next time I might add some red wine vinegar to the olive oil and whisk them together before drizzling- just personal taste as the red wine vinegar adds some zing! Thanks for a wonderful recipe!

I am a middle aged foodie who has had the luxury of living all over the world except asia. Lived in or grew up in Nigeria, Kenya, Chicago, Russia,and haiti. born in New Zealand, brother born in Austria and many more.
I have chronic medication resistant depression after 10 years on anti depressants that worked well but would stop working after a year or two, so now do my best at home living on disabilty. Not a bad thing, many have far worse health issues but i have been able to concentrate on food/cooking.
My main passions are my cats. I live in the woods and somehow many starving strays or "dumps" have found the message babies who passed on left in the woods saying "suck lives at xxxx road. Most arrive sick and/or starving. Right now i have 2 that arrived with feline herpes and their attendant 2ndry bacterial infections but are doing beautifully. One old man who was going to be euthanized bc a lady who found him as a stray was moving and didnt want him...well he was a biter and rather grumpy who was in ICU for 3 days with a deadly gut infection which was fixed but he left with a diagnosis of diabetes. 3 months on insulin and finally diet controlled and he caught the herpes virus, respiratory symptom version and turned into a cuddler. Butterscotch must think "why didnt i figure out this cuddle stuff was great before i got sick!" Doing wonderfully even though he has bouts. he and the other kids are my babies. Sadly Butterscotch died of Lymphatic cancer in winter of 2008. A year before Big Boy arrived in my life, starving and weak. Full of affection he jumped into my arms and stayed, turns out he has FIV (cat hiv) so he needs to be watched closely. I love him dearly
