- 15 large carrots, thinly sliced
- 1⁄2 cup canola oil
- 1⁄2 cup sugar
- 3⁄4 cup flour, sifted
- 1⁄4 teaspoon cinnamon
- 1⁄2 teaspoon nutmeg
- 1⁄2 teaspoon baking powder
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
directions
- Cook the carrots (scrubbed well you don't have to peel them) and then mash them.
- Cream 1/2 Celsius shortening (or oil) and 1/2 Celsius sugar.
- Add flour, cinnamon, nutmeg, baking powder, baking soda, and salt.
- Add mashed carrots.
- Place the mixture in a greased casserole and bake at 325 degrees for 45 minutes to 1 hour.

I only came to cooking in my 50s, when we moved home to a tiny town with only a few restaurants. I'm always on the hunt for easy, flavorful recipes (often ethnic cuisines), and I'm always ready to try something new and different! In cold weather I gravitate to stews, soups, and casseroles of the not-too-heavy kind; in hot weather I love a salad or cold soup. Partly because of my husband's diabetes (I'm borderline) and partly out of indolence, baking is not my thing.
