Grain Free Blueberry Cheese Danish

- 8 ounces shredded mozzarella cheese (about 2 cups)
- 2 ounces cream cheese
- 1 egg
- 1 cup grain, free flour mix (1/3 cup each flour -- coconut, almond and ground golden flax seed)
- 1 tablespoon your choice sugar substitute
- 1 teaspoon vanilla
- 8 ounces cream cheese, softened
- 1 teaspoon vanilla
- 1 egg
- 1⁄4 cup your choice sugar substitute
- 3⁄4 cup blueberries
directions
- Preheat oven to 350 degrees.
- Microwave the mozzarella in safe bowl for 1 minute. Stir and then microwave 30 more seconds. Stir and microwave another 30 seconds. It should look like fondue at this point.
- Add the 2 oz cream cheese, 1 egg and flour mix, mix in a food processor or in bowl with a wooden spoon. If not mixing well, dump on wax paper and knead with hands until uniform in color.
- On parchment lined baking sheet, spread dough into a 9 x 12" shape.
- In same food processor or bowl, mix the remaining ingredients except berries.
- Put the filling down the center of the dough the long way. Use a rubber spatula to push back into middle as needed.
- Sprinkle the blueberries on top of cheese.
- Cut 1" strips down edges of the dough and criss cross up and across cheese and berries.
- Bake for 40-45 minutes or until cheese is set and not jiggly.
