ingredients
- 1⁄2 cup butter, softened
- 1⁄2 cup packed brown sugar
- 1 egg
- 2 tablespoons milk
- 1 teaspoon vanilla
- 16 whole cinnamon graham crackers, crushed fine to make 2 cups (or plain, with 1 teaspoon granulated sugar and 1/2 teaspoon cinnamon added)
- 1⁄2 cup flaked coconut
- 1⁄2 cup milk or 1/2 cup semisweet chocolate piece
- sifted confectioners' sugar
directions
- Preheat oven to 350.
- Grease a 9 inch square pan (I used an 8 inch square pan and it worked fine).
- In a large bowl, beat butter and sugar until creamy.
- Add egg, milk, and vanilla.
- Beat just until blended, the mixture will be grainy.
- Stir in graham cracker crumbs, coconut, and chocolate until just mixed.
- Spread evenly in pan.
- Bake 25 to 27 minutes until lightly browned on top.
- Cool and sprinkle with confectioner's sugar.
- Cut into bars and serve.

I have been looking for a quick cookie bar using graham cracker crumbs and this was better than I hoped for! I just used the plain graham cracker crumbs I had on hand and added 1/2 cup chopped pecan pieces. I omitted the milk because I was looking for a crunchy texture and thought the milk might make them soft. Lastly - I pressed the dough into a 9x13 inch cookie pan and baked them at 325 degrees F for about 20 minutes. Excellent recipe! Thanks so much!

How can something so good be so easy!! It satisfies the dessert craving without being overly sweet. I made it exactly as written however I ran out of graham wafer crumbs so I had to use 1 c. of Oreo chocolate crumbs. I added the chopped pecans as suggested by a reviewer then baked them in a 9x9" pan. They turned out perfect & were a huge hit in our house. Half the pan was gone in no time. Thank you for the recipe. I think it will be a frequent 'go to dessert recipe'.
