  • Peel and boil the potatoes. When cooked, mash them and mix in remaining ingredients.
  • Pour into muffins tins (this recipe makes twelve muffins). Sprinkle top with cinnamon.
  • Bake on 350 degrees for 20-25 minutes.

  1. These had a really nice, moist texture. I would recommend that, since they don't rise, you fill the muffin cups all the way up. Either way, you won't miss the wheat with this one. Even my husband who is "pro-gluten" loved them.
