Gingerbread Syrup

ingredients
- 1 cup water
- 1 cup brown sugar
- 2 tablespoons molasses
- 1 1⁄4 teaspoons cinnamon
- 1 teaspoon ginger
- 1 teaspoon lemon zest
- 1⁄4 teaspoon clove
directions
- Combine all ingredients in a sauce pan and heat over medium heat.
- Stir till sugar is dissolved.
- You can strain this through cheesecloth for a clearer syrup, or leave the spices in it.

A nice start, but if you like your gingerbread flavor to have a bite, needs more ginger. I added about an inch of fresh ginger, sliced, and more ground ginger to taste, maybe an extra teaspoon. Simmer until fresh ginger is infused. Lemon zest is a nice touch. Quarter teaspoon ground allspice rounds it out.
