ingredients
- 3 large egg whites
- 4 3⁄4 cups powdered sugar
- 1⁄2 teaspoon cream of tartar
directions
- In a large clean bowl, beat egg whites and cream of tartar with electric mixer at medium speed.
- Add powdered sugar in small amounts, mixing well on high speed after each addition.
- Beat on high speed 4-5 minutes or until mixture thickens.
- Refrigerate, covered, until ready to use.
- You may need to stir icing to soften before use.

I'm thinking of using this recipe for a Christmas Party where I'll be making a lot of icing and putting it in piping bags for everyone to make their own mini gingerbread houses...how long will this last in the fridge? Can I make it the night before or should I make it that day (the party is in the evening)?
