Garlic Chicken Tomato Fry

ingredients
- 1 chicken breast
- 1 teaspoon olive oil
- 2 tomatoes (diced)
- 3 mushrooms (sliced)
- 2 garlic cloves (chopped)
- 1 teaspoon onion powder
- 1 dash ground pepper & sea salt
- 4 fresh asparagus spears (chopped)
- 1⁄2 cup green pepper (chopped)
- 2 cups Baby Spinach (chopped)
directions
- In a frying pan on medium high heat, fry chicken with oil and garlic for 10 minutes.
- Once done, diced chicken and place back into frying pan. Adding remaining ingredients, fry for 7 minutes on medium heat.

I used fresh green beans instead of the asparagus and this turned out OK, I guess. I omitted the spinach also. I could not decide if this dish was TRYING to be Italian or Chinese ?? so I then added some Asiago Italian dressing at the end of the cooking time and this added much more flavour and needed moisture. I still wasn't very impressed. This recipe just lacks something. Not sure what tho ???
