- 1 (10 ounce) package couscous (regular or whole wheat)
- chicken stock
- 1 1⁄2 cups frozen sweet peas
- 3⁄4 cup crumbled feta cheese
- 1⁄3 cup sliced green onion
- 1⁄4 cup chopped of fresh mint
- 2 tablespoons grated lemon zest
- 3⁄4 teaspoon pepper
- salt
directions
- Prepare the couscous according to package directions, using boiling chicken stock instead of water.
- Cover and let stand 5 minutes. Fluff up couscous with a fork.
- Add remaining ingredients to couscous, stirring to combine well.
