Fresh Fruit Salad With Coconut Cream
- Ready In:
- 2 eggs
- 1⁄4 cup sugar
- 3⁄4 cup coconut milk
- 1⁄2 cup half-and-half
- 1⁄2 teaspoon vanilla
- 1 pinch salt
- 1⁄4 cup shredded coconut, toasted
- kiwi, sliced
- banana, sliced
- orange, segmented
- strawberry, sliced
- Beat eggs and ¼ cup sugar in heavy saucepan. Beat in coconut milk and half and half. Stir over medium low heat till mixture thickens, about 4 min; do not boil.
- Strain into small bowl. Mix in vanilla and salt. Cool and chill.
- Arrange fresh fruit slices of your choice. Spoon cream on top of fruit and sprinkle toasted coconut on cream.
