DIRECTIONS

  • Beat eggs and ¼ cup sugar in heavy saucepan. Beat in coconut milk and half and half. Stir over medium low heat till mixture thickens, about 4 min; do not boil.
  • Strain into small bowl. Mix in vanilla and salt. Cool and chill.
  • Arrange fresh fruit slices of your choice. Spoon cream on top of fruit and sprinkle toasted coconut on cream.
