  • Beat yolks until frothy. Beat in lemon juice,salt & pepper. Beat in oil, about a teaspoon at a time until 1/2 cup has been added. Add rest of oil more quickly, about a tablespoon at a time. Beat until like mayonnaise. May not need all the oil.
  • Stir in chives, parsley & onion. Chill until ready to serve.
