Filet Mignon With Chipotle Adobo Sauce

- 1 -2 lb filet mignon steak
- 2 garlic cloves
- 1 small onion
- 1 tablespoon honey
- 1 -2 chipotle chile in adobo
- 1⁄3 cup ketchup
- 1 tablespoon oil
directions
- Place all but the steak in a blender. Puree until smooth.
- Season steaks with salt and pepper. Place in a ziplock bag and pour the sauce over meat.
- Chill for 2 hours.
- Remove meat and simmer sauce till warm.
- Grill steaks to desired doneness.
- Remove meat when done and let sit 10 minutes.
- Add the dripping of the meat to the sauce.
- Slice meat and serve over rice.
- Dollop the sauce over meat.

Rita I don't know what Summers problem with this recipe was, but pretty darned sure she didn't even try it, cuz it is downright delicious, and if you can taste the catsup in this let me know, cuz I sure couldn't!!! I was lucky enough to find two very nice Filet Mignon's at the market yesterday, and used this on them. The only thing I would do different is to use only one chipotle instead of the two as it was just a bit too spicy for us with the two, and I am sure this will work on ANY steak you try it on. People don't jump to a conclusion until you try this wonderful recipe, you won't be sorry.
