Elegant Seafood Bisque created by Hope Smith Polk

This makes a to die for super rich seafood bisque, chocked full of seafood such as shrimp, crab, salmon, clams and cod and is lower carb than most,due to no potatoes. Hint for low carbers: use Wondra "instant flour" and all you will need is about 1 or 2 TBS to thicken. The original recipe was obtained from a local restaurant.

  • Sauté minced shallots in butter until soft.
  • Add the flour and stir with whisk for 5 minutes on low heat, set aside.
  • Bring one quart of water to a boil and add chicken base, clams, crab, shrimp and whole pieces of salmon and cod.
  • Return to boil, lower heat and simmer for 5 minutes.
  • Strain the stock, reserving the seafood.
  • Stir the shallot mixture into the stock.
  • Add the heavy cream and half and half to the stock, bring to a simmer on low heat and cook until thickened, about 5 minutes.
  • Chunk the salmon and cod and add all of the seafood back into the soup pot.
  • Add the sherry and heat through, no more than 3 minutes.

    My husband and I loved this! I had to add more salt than I expected (2 tsp., I think). For the seafood, I put in 1 salmon filet, 1 cod filet, 1/2 lb crab meat, 1/2 lb bay scallops, 1/2 lb shrimp, 1 can of clams. Instead of water, I made a light broth of shrimp shells and tails, onion, celery, carrot, garlic, coriander, bay leaf, and black peppercorns. It was lovely! Going to make for my next family get-together. Thank you!

    I'm making the seafood bisque for approx.40 people. My last bisque included 5 lbs. deep sea scallops, 5 lbs. whiting, 4 cans of clams, 2 lbs. shrimp, 1 stalk of celery, 6 green onions -chop fine, 1 packet of you favorite seafood spices, 1 gal. heavy cream, 1 1/2 lbs. butter. use hand Blender. Blend to rich, smooth thickness. Cooks in 35 - 40 minutes. Yums the word!

    Add this to your recipe rotation now. It is OUTSTANDING. The base is a perfect blend of buttery and creamy, without being too heavy. I did add more seafood based on other reviews, (plus how seafood is sold/packaged). In tweaking, I used 1 lb shrimp, 1 lb lump crabmeat, 1 lb sea scallops (quartered). We like tarragon and saffron in our seafood, so that went in as well. Excellent recipe, thank you !
