- 1 lb ground turkey (lean or extra-lean)
- 1 ounce taco seasoning (El Paso)
- 1 (15 ounce) can black beans, drained & rinsed (Bush's)
- 8 taco shells (hard tacos)
- 1⁄2 cup colby-monterey jack cheese
- 1⁄2 cup iceberg lettuce, shredded
- sour cream, to taste
- salsa, to taste
directions
- Brown ground turkey in large skillet oer medium (if using extra-lean, spray skillet with non-stick spray first), breaking up turkey, until cooked through.
- While browning turkey, heat taco shells on rimmed sheet at 325, 5 to 7 minutes.
- Sprinkle turkey with taco season. Reduce heat to low and add black beans; stir to coat with seasoning.
- Assemble tacos: turkey/beans, cheese, desired toppings.
- Low-carb dieters might omit the taco shell.
- Good served with fresh corn and prepared brown rice!
