- 1 lb tri-color spiral pasta, cooked according to package directions
- 1 (133 g) can light chunk tuna in water, drained and flaked
- 2⁄3 cup cucumber, sliced and quartered
- 2⁄3 cup red pepper, finely diced
- 1⁄2 cup celery, finely diced
- 1⁄3 cup red onion, finely chopped
- 3⁄4 cup roma tomato, seeded and finely diced (about 2 large)
- 3⁄4 cup feta cheese, crumbled
- 1⁄3 cup black olives, sliced
- 1⁄2 cup Greek salad dressing (to taste)
- 1⁄2 teaspoon black pepper, to taste
- 1 tablespoon parsley, chopped (garnish)
directions
- In a large bowl, add cooked rotini pasta, tuna, cucumbers, red peppers, celery, and red onions; toss to blend.
- Add Roma tomatoes, feta cheese and black olives; gently toss again.
- Pour in a little bit of Greek salad dressing and toss before adding a little bit more if needed or until the ingredients are lightly coated; season with salt and pepper.
- Before serving, garnish with freshly chopped parsley and toss one more time to mix.
