Easy Double Chocolate Zucchini Bread

"I made this for a potluck, and I wasn't sure how it would go. Everyone loved it and wanted to know who made the chocolate cake? Another wanted to know why she loved it if she didn't like chocolate cake. Surprise, it's a chocolatey moist zucchini bread with frosting.   • Preheat oven to 350. Grease two 9x5 inch loafpans.
  • In a microwave safe bowl, heat chocolate until melted and smooth. Let cool.
  • In a bowl, combine eggs, sugar, oil, zucchini, and vanilla. Stir well.
  • Mix in melted chocolate.
  • Gently stir in flour, baking soda, and salt. Stir in chocolate chips.
  • Pour batter into prepared loaf pans and bake for 1 hour or until a toothpick inserted comes out clean.
  • Let pan cools completely.
  • For frosting: In a bowl, beat the butter until creamy. Slowly add in powdered sugar one cup at a time and mix in cocoa powder. Stir in vanilla.
  • Add milk until frosting is creamy, adding more milk if necessary.
  • Spread or pipe frosting over bread loaves. Store bread in refrigerator.
  • Bread can be stored at room temperature if frosting is omitted.

  1. Very good. Delicious actually. I used 1/2 cup oil 1/2 cup applesauce. The amount of sugar was left out of the recipie so I checked a similar recipe which called for 2 cups which made it more brownie tasting. I'm sure much less sugar can be used.
