Easy Dijon Roasted Potatoes

- 1 1⁄2 lbs medium potatoes, cut into eights or 1 1/2 lbs mini potatoes, halved
- 1⁄2 cup olive oil
- 1⁄4 cup french's Dijon mustard
- 1 tablespoon dried oregano, basil or 1 tablespoon rosemary, leaves
- salt and pepper
directions
- Place potatoes in a large baking dish or roasting pan.
- Combine remaining ingredients. Drizzle over potatoes. Toss to coat.
- Bake at 424F for 30-40 minutes, stirring often, until potatoes are tender.

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
