Easy Corn Salsa

INGREDIENTS

    (15 ounce) can sweet corn (drained)
  • 1
    (15 ounce) can black beans (drained, rinsed)
  • 1
    (10 ounce) can rotel (I prefer "hot", but original recipe calls for "mild")
  • 1
    small red onion, diced
  • 14 - 12
    cup cilantro, finely chopped
  • 1
    garlic clove, finely chopped
  • salt and pepper

DIRECTIONS

  • Combine all ingredients in a medium bowl. Mix well and chill for at least 1 hour before serving. Serve with Tortilla chips or Pita chips. Refrigerate left overs for up to 3 days.
