Easy Cheesy Beef Enchiladas

"Great tasting & simple to make, these enchiladas are a real family pleaser! Wonderful made with Shredded Beef recipe #269126, also very tasty made with browned ground beef or shredded chicken. Serve with a side of refried beans and garnish with sliced black olives, green onion, guacamole and sour cream as desired. Yum!"

Ready In:




  • Heat shredded beef (or cooked ground beef, shredded chicken).
  • Add the chopped green chiles and the garlic powder to the meat; mix well. You may also like to add some sliced black olives and chopped green onions.
  • Mix in 1 cup of the shredded cheese.
  • Warm the tortillas for a minute in the microwave, or warm in the oven.
  • Spread about 1/2 cup enchilada sauce in the bottom of a 13 x 9 inch pan.
  • Place a spoonful of meat mixture onto a tortilla; roll up and place seam down in baking pan. Repeat with remaining tortillas, placing them side by side in the pan as you go.
  • Spread remaining enchilada sauce and any meat mixture over top of tortillas; sprinkle with remaining cheese.
  • Bake at 350F degrees for 20-30 minutes or until hot and bubbly.
  • Serve with a side of refried beans and garnish as desired with black olives, green onions, guacamole, and sour cream.

<p>Married to my sweetheart for almost forty years and we have two wonderful children who are grown and have flown the coop. Also, we have been blessed with a wonderful son-in-law and beautiful daughter-in-law, plus FIVE grandchildren: two beautiful granddaughters ages five and eight, and three sweet adorable little grandsons ages 2 months, 2 years and 3 years. Another top favorite is Julia Child (of course!). A few other chefs I read/enjoy watching on t.v. are: Giada At Home, Ina Garten's The Barefoot Contessa, Nigella Lawson's Nigella Bites, and Patti's Mexican Kitchen, and many more. On my bucket list is dining at Thomas Keller's establishment The French Laundry in Napa Valley, California... as well as Alice Waters' Chez Panisse in Berkeley, and the James Beard award winning Tartine Bakery and Cafe in San Francisco. One day!! &nbsp; Hobbies/Interests: Decorating with fresh flowers and herbs from the garden is my passion, and brings me deep joy! It's really hard to beat!! I love connecting with others who enjoy the same. Gardening, decorating, sewing, music, dancing, film, and reading are also up there.
