  • Saute garlic in olive oil over low heat.
  • Add black beans and bring the heat up to medium to begin cooking out liquid.
  • Stir frequently and mash beans as you stir.Cook 10-15 minutes. Top with sour cream and chopped onions.

  1. May be simple, but was JUST RIGHT, served with "Recipe#274990", and applesauce. I did not change a thing - except used scallions in place of onions, and thought that was likely an improvement. Thanks for sharing, kfreekave.
     
  2. Well, I added so much stuff to this recipe that it was probably nothing like the original recipe, but thank you so much for the base and the idea to get started! I used 4 or 5 cloves of garlic and sauteed a whole onion with the garlic. After adding the beans, I added some black pepper, cayenne pepper, cumin, and chili powder. Last, I stirred in two servings of cooked brown rice. We ate it with vegan sour cream and salsa. Tasty, cheap, easy, healthy, and filling! Thanks!
