Just wanted to comment... You don't always have to add water. That is just so the saltiness doesn't over power the finished dipping sauce. So adjust according to your taste, since the saltiness of your soy sauce (they vary by brand and color). Also, I like to add a drop or two of dark sesame oil, as well as some crushed garlic. Yum!
