Dreamy Chocolate Mint Sauce

"A rich tasting dessert sauce that's reminiscent of after dinner mints. Serve warn or cool over ice cream or cake. This can also be spread on the center of a two layer cake for the chocolate mint taste. From Land-O-Lakes Cookbook."

• Yields: 4 cups

ingredients

• 1 cup sugar
• 1⁄2 cup butter, cut into pieces (or margarine)
• 3⁄4 cup water
• 1⁄4 cup light corn syrup
• 12 ounces semi-sweet chocolate chips
• 1⁄4 cup creme de menthe (OR substitute with 1 teaspoon peppermint extract)

directions

1. in 2 qt saucepan combine sugar butter, water and corn syrup.
2. cook over med heat, stirring constantly until mixture comes to a full boil (5 to 8 min).
3. boil 3 minutes, remove from heat, immediately add chocolate chips, beat with wire whisk or rotary beater until smooth.
4. stir in creme de menthe, and whisk.
5. serve as you desire.
