- 1 (18 ounce) pkge. white cake mix
- 1 (3 ounce) instant vanilla pudding or (3 ounce) cheesecake flavor instant pudding and pie filling
- 4 eggs
- 1⁄2 cup water
- 1 tablespoon rum extract, plus water to make 1/3 cup
- 1⁄4 cup oil
- 1 cup flaked coconut (optional)
- icing
- 1 (8 ounce) can crushed pineapple in juice
- 1 1⁄2 teaspoons rum extract, plus
- water, to make 1/4 cup
- 1 (3 ounce) instant vanilla pudding or (3 ounce) cheesecake flavor instant pudding and pie filling
- 1 (8 ounce) container frozen whipped topping
- 1 cup flaked coconut
directions
- Blend all ingredients except coconut.
- Beat 4 minutes at medium speed.
- Stir in coconut.
- Pour into 2 greased and floured 9 inch layer cake pans.
- Bake at 350 degrees for 25-30 minutes.
- Frosting.
- Combine all ingredients except whipped topping and coconut; beat until blended.
- Fold in whipped cream.
- Frost. Sprinkle with coconut. Chill.
