Delicious Ham and Potato Soup

  • Combine the potatoes, celery, onion, ham and water in a stockpot. Bring to a boil, then cook over medium heat until potatoes are tender, about 10 to 15 minutes. Stir in the chicken bouillon, salt and pepper.
  • In a separate saucepan, melt butter over medium-low heat. Whisk in flour with a fork, and cook, stirring constantly until thick, about 1 minute. Slowly stir in milk as not to allow lumps to form until all of the milk has been added. Continue stirring over medium-low heat until thick, 4 to 5 minutes.
  • Stir the milk mixture into the stockpot, and cook soup until heated through. Serve immediately.

  1. I really enjoyed the fact that this recipe didn't use cheese: sometimes soups w/ cheese don't reheat well :-). Husband loved this! I cut the recipe in 1/2 but ended up using about 1 cup of lean turkey ham. I used veggie broth for the water (omitted bouillon) & liked the fact that the flour/butter combo was made separately & then added to the meat mix. It was very good & I hope hubby requests it again :-). Thank you!
     
  2. This was quite good on its own. I followed the recipe exactly with the exception that I just used free-range, reduced sodium chicken broth instead of water and elimated the chicken bouillon entirely. You could taste each individual flavour and that was nice. I like strong flavours so I would like to add some crushed garlic next time and perhaps a little more pepper and maybe some other spices. Very good as is though. Thanks for posting!
     
  3. My friend made and suggested this recipe. Very good, and I love that it doesn't contain cheese. Quick and easy and of course reheats well. I used chicken base instead of bouillon, and would reduce the salt next time. Also, I used Penzey's white pepper which is pretty strong, next time I'd reduce that a bit. Delicious on a cold day! Thanks for sharing the recipe!

I modified slightly as I like a little cheese (but didn't have) so I added a can of cheese soup and more water and used some celery seeds as I also didn't have celery, and added garlic cloves...made with new little reds and it was fabulous. Topped it off with a few romano cheese croutons and it was a hearty soup. I'm no soup maker but this one, I could do.

  2. I reduced this to 4 servings and used one beef bouillon cube (no chicken) and substituted red pepper for the celery. I did not add the extra salt. My children really liked this soup, and I found it really easy to throw together. I did not blend the ingredients in the blender.
