ingredients
- 1 (15 ounce) can pumpkin
- 1⁄2 cup brown sugar
- 1 teaspoon vanilla
- 1⁄2 teaspoon salt
- 1 1⁄2 teaspoons baking soda
- 2 1⁄4 cups whole wheat flour
- 1⁄3 cup canola oil
- 1⁄2 cup water
- 1⁄2 cup chocolate chips
directions
- Mix it all up and bake in 12 pre-sprayed muffin tins at 350 for 23 minutes.

Pretty good muffins. Not quite sweet enough for our tastes. I added honey, would've used agave if I had it. Also had some chai syrup I had kicking around in my cupboard that I added for extra sweetness as well as a bit of spice. Also added lots of cinnamon, nutmeg and a pinch of ginger. Next time I make this I will add a touch more sweetener. Super easy to make though which is always a plus!
