- 1 cup rinced and toasted red quinoa
- 2 cups broccoli, pieces
- 1 cup red onion (chopped)
- 2 tablespoons curry powder
- 2 -4 garlic cloves (chopped)
- salt (to taste)
- pepper (to taste)
- 4 teaspoons extra virgin olive oil
- 2 cups boiling water
- 1⁄2 cup roasted peanuts
directions
- Saute broccoli, onion, curry, garlic, salt, and pepper with oil until tender.
- Combine with quinoa and water and simmer for 15 minutes or until water is absorbed.
- Add peanuts and stir.
- Serve hot!

Growing up with an Italian Mum, I have been in the kitchen since the day I came home from the hospital. The first thing that I cooked alone was a grilled cheese sandwich (microwave style, very classy) at age 6. Since then, I have made countless family meals and hosted even more dinner parties for family and friends.
I'm most known for my chocolate cake and my ricotta-olive stuffed manicotti with a shallot cream sauce. My favorite restaurant is Beans and Barley, a mainly vegetarian place on the East side of Milwaukee. If not that, than Mama Mia's of Milwaukee. Even if it is just not a carry-out and deliver place, nobody makes better garlic bread. You practically eat half a loaf of bread SOAKED in garlic butter topped with parmesan cheese. My biggest pet peeve is repetitious noises. My biggest passion is feeding people who enjoy eating REAL food.
