ingredients
- 2 large cucumbers
- 10 baby carrots
- 15 cherry tomatoes
- 4 pepperoncini peppers
- 1⁄4 red onion
- 1⁄2 green bell pepper
- 1⁄2 red bell pepper
- 4 ounces feta cheese
- 2 tablespoons olive oil
- 6 tablespoons red wine vinegar
- 1⁄2 lemon juice
- 1 pinch salt
- 1 pinch pepper
- 1 teaspoon dried oregano
directions
- Slice all vegatables in desired bite-sized chunks.
- Toss veggies in a large bowl.
- Add wet ingredients.
- Add salt, pepper and dried oregano.
- Fold in feta cheese.
- Can be eaten right away, but tastes great after it sits for a bit!
