Crock Pot Chicken Cacciatore

I originally got this recipe from WW. It's become such a staple around our house. I've added a few more veggies to it to make it a more complete meal. It's designed for a smaller crock pot, so if you have a large one, just double the recipe. Chicken can be thawed, partially thawed or even frozen; just adjust the cooking time. Fast, easy and oh so delicious.

ingredients
- 1 1⁄2 lbs skinless chicken thighs, thawed
- 1 (28 ounce) can Italian-style stewed tomatoes
- 1 small green pepper, chopped
- 1 small onion, chopped
- 1 small zucchini, chopped
- 2 garlic cloves, minced (optional)
directions
- Combine all ingredients in crock pot, stir to mix.
- Simmer on low for 8 to 10 hours, or on high for 6 hours.
- Serve over brown rice or any type of pasta/noodle.
- Note: Bone-in chicken thighs can be used but boneless is easier; 1-1/2 lbs should be about 8 thighs.

I make mine with either, whole, diced or crushed tomatoes, garlic ( powder or whole ), chicken breast, green pepper, basil, olive oil and zucchinni. Slice the chicken breasts into strips first and then place it into the crock pot. The spices are to taste so there's no measuring. Salt and Pepper are optional. Serve over Pasta or Rice or eat by itself. The chicken doesn't take long to cook and is nice and tender.Reply

This is a hit at my house! I only made a couple changes last night (though it's WONDERFUL as is). I added a couple extra cloves of garlic, omitted the green pepper that I forgot to buy and used some diced eggplant leftover from another recipe since I didn't have any zucchini. Also added some salt and pepper and a little italian seasoning. Served it over rice and/or Oven Fried Eggplant (recipe 49387) and it was out of this world!!! Can't wait to serve these two together again!! So good I finally created an account so I could rate them both! Try it!Reply
