Crispy Coated Cajun Fries

- 2 russet potatoes, cut into fries
- 1⁄3 cup masa flour
- 2 teaspoons cornmeal
- 2 teaspoons cajun seasoning
- oil, to fry
directions
- Peel and cut potatoes into fries. Soak in cold water until ready to use, but at least 10 minutes.
- In a bowl or zip bag, combine masa flour, cornmeal and Cajun seasoning. Blend well.
- Drain the potatoes but leave them wet.
- Dip fries into the seasoning mixture and shake to coat.
- Heat oil (375 deg.) in cast iron pan or deep fryer.
- Cook fries in the hot oil for 7-10 minutes until golden brown.
- Remove from fryer and drain on paper towels.
- Season with salt.
