Creamy Garlic Mushroom Angel Hair

- 2 tablespoons Smart Balance butter spread
- 2 large garlic cloves, minced
- 2 lbs fresh mushrooms, sliced
- 4 tablespoons flour
- 2 teaspoons parsley flakes
- 1 dash salt and pepper, to taste
- 1⁄3 cup fresh parmesan cheese, grated
- 3⁄4 cup nonfat milk
- 3⁄4 cup chicken broth
- 1 lb angel hair pasta, cooked as directed, drained and kept hot
directions
- Melt Smart Balance and add minced garlic in a medium sauce pan and cook over medium heat for 1 minute.
- Saute sliced mushrooms for 3 minutes until soft.
- Add flour and cook for 1 minute, stirring constantly.
- Gradually add milk and stir out any lumps.
- Add chicken broth and stir to combine.
- Add parsley, salt, pepper and cheese and stir until cheese is melted.
- Toss hot pasta with sauce and serve immediately.

I had high hopes for this recipe since I love the combination of ingredients. I do wish I had checked the amounts and steps before starting. My sauce came out thick and clumpy, not creamy at all. Plus, the directions do not state when to add the broth and milk. As I later checked Karen's recipe, I found that the flour here (4 T. vs. 2 T.)was doubled and also saw when to add the liquids. I will try this again as we liked the flavors, but will make adjustments. Made for My 3 Chefs.
