- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 1⁄2 teaspoons baking powder
- 1 teaspoon salt
- 1⁄2 teaspoon baking soda
- 3⁄4 cup orange juice
- 1 tablespoon grated orange peel
- 2 tablespoons shortening or 2 tablespoons margarine
- 1 egg (well-beaten)
- 1 1⁄2 cups cranberries (fresh or frozen)
- 1⁄2 cup nuts, chopped
directions
- Preheat oven to 350.
- In a large bowl mix together flour, sugar, baking powder, salt and baking soda.
- In a separate bowl combine beaten egg, orange juice and shortening.
- Add wet ingredients to dry ingredients (you can add more OJ if necessary to obtain batter consistency).
- Fold in orange peel, cranberries and nuts.
- Place into a greased 9x5 loaf pan.
- Bake for 55 minutes or until an inserted toothpick comes out clean.
- cool on a rack for 15 minutes.
