  • Place about 5 cranberries into each tart shell.
  • Combine egg, sugar, butter, vanilla, and coconut. Spoon filling over cranberries.
  • Bake at 325F for 20 to 25 minutes or until rich brown in colour.
  • (If using 2-inch tarts place 3 cranberries in each tart shell.).

  1. These were great!!!! Mine were done in alittle less than 20 minutes but that is the only problem I really had! Thanks for the recipe! Oh and by the way, don't stack these tarts! Mine fell in when I did that!
     
  2. I first made these for Christmas and they were so popular I make them regularly throughout the year. They are the right combination of sweet and tart with a lovely vanilla finish. Quick to make and the recipe is very forgiving - You can pull the tart shells out of the freezer, toss in frozen cranberries, mix up the coconut mixture in a minute and bake.
     
  3. These tarts are wonderful. I had people who said they didn't like cranberries eating these and loving them. They are now a must in my Christmas cookie platters.

Just another crazy mother/wife that "manages" to work full time, care for 3 teens AND love to cook and bake!! I am constantly searching for recipes that are healthy, fast, fun and kid-friendly. DH claims that I can NEVER follow a recipe without tweaking it. Sigh. I try really hard to include my tweaks when I write my reviews for all those other recipe tweakers. If my tweaks don't work then I will review your recipe without a rating and indicate my tweaks failure NOT the recipe!!! Best kids comment: My kids asked for copies of all my recipes, so when they get married they can prepare them! Pet Peeve: Reviewers that don't include comments on their reviews. Also, reviewers that are not fair when they give their reviews - if you have always hated carrots then please don't bother rating the carrot recipe!
