DIRECTIONS

  • Saute the onion in the coconut oil until it's soft. About 8 minutes.
  • Add the thyme and stir, add the bouillon and stir it around. It will stick to the pot bottom, add the wine and de-glaze the pot. Simmer for 2 minutes.
  • Add the tamari sauce, chicken broth and stir well to mix. Simmer for about 5 minutes.
  • Add the chicken broth and squash. Stir well and simmer for about 10 minutes.
  • Add the coconut milk. Stir and simmer for 5 more minutes.
  • With a hand blender puree the soup.
  • Add the corn, salt and pepper.
  • Serve hot.
