ingredients
- 1 lb zucchini, 4 small
- 12 ounces corn, drained
- 1 (2 ounce) jar pimiento, drained
- 2 garlic cloves, crushed
- 2 tablespoons oil
- 1 teaspoon salt
- 1⁄4 teaspoon pepper
- 1⁄2 cup mozzarella cheese, shredded
directions
- Dice zucchini.
- In large skillet, stir together all ingredients except cheese. Cover. Cook over medium heat about 10 minutes.
- Stir in cheese. Heat through.

I can't believe how delicious it is. I had to let cook for another 5 minutes cause I wanted my zucchini to be tender. I didn't add salt and pepper. I didn't crush the garlic, I finely chopped it. I cut the pimiento. I'M so glad to have leftovers of this. And also it's full of colors, it's wonderful. Thanks Lazyme :) And yay! I'm the first one to try it :)
