  • Mis together oil, vinegar, sugar, salt and pepper. Set aside.
  • Mix together vegetables.
  • Pour dressing over vegetables and mix.
  • Store in refrigerator overnight.
  • Keeps 1 week.

  1. I am so glad to see this salad recipe posted! I usually have to do a google search for "Claremont Salad" when I want to make it. I usually add some celery seed to the dressing and I omit the oil, but other than that this is how I make it. It freezes well too!
