  • Preheat oven to 350°F
  • Sift flour again with baking powder, salt, and cinnamon.
  • In a separate bowl, cream butter and sugar thoroughly.
  • Beat in eggs, one at a time, beating hard after each egg.
  • Stir in flour mixture, and milk alternately.
  • Pour into greased muffin pans and bake for 25 minutes or until a toothpick inserted in center comes out dry.

    WC - these turned out to be a very nice muffin. l did tweak the recipe a bit based on the previous reviews and tips. I used applesauce in place of the butter (more flavor less fat), added an extra 1/2 tbs of cinnamon (favorite spice) and about 1 tsp of fresh ground nutmeg, and as it is habit about a tsp of vanilla. Just moderate changes even though this seems like a lot. I used Pam spray on the muffin tins and I did not have any issues with sticking but I did remove them from the pan after only about 3 minutes of cooling as they were still soft enough to help pull them from the side. I received 12 full muffins and they were finished baking in 18 minutes (I would recommend checking them after 15). My family loves these and they warm up wonderfully in the microwave too. Thanks for sharing a great keeper recipe! Made for your win in Tic Tac Toe 2011.
