  • Preheat oven to 350°F
  • Sift flour again with baking powder, salt, and cinnamon.
  • In a separate bowl, cream butter and sugar thoroughly.
  • Beat in eggs, one at a time, beating hard after each egg.
  • Stir in flour mixture, and milk alternately.
  • Pour into greased muffin pans and bake for 25 minutes or until a toothpick inserted in center comes out dry.

  1. WC - these turned out to be a very nice muffin. l did tweak the recipe a bit based on the previous reviews and tips. I used applesauce in place of the butter (more flavor less fat), added an extra 1/2 tbs of cinnamon (favorite spice) and about 1 tsp of fresh ground nutmeg, and as it is habit about a tsp of vanilla. Just moderate changes even though this seems like a lot. I used Pam spray on the muffin tins and I did not have any issues with sticking but I did remove them from the pan after only about 3 minutes of cooling as they were still soft enough to help pull them from the side. I received 12 full muffins and they were finished baking in 18 minutes (I would recommend checking them after 15). My family loves these and they warm up wonderfully in the microwave too. Thanks for sharing a great keeper recipe! Made for your win in Tic Tac Toe 2011.
     
  2. These were very dense muffins. I got 12 muffins out of the batch like everyone else & they only took 20 mins to cook. I did use 2/3 cup of Splenda instead of the 1 cup of sugar & I added dried cranberries. I think these muffins would have been very plain without them.
     
  3. These were wonderful! My yield was also 12 muffins, and I had a bit of problem removing mine from the muffin tin, even after spraying very well with Pam. I added some cinnamon chips, as I had some on hand, and thought they would be a wonderful compliment. And they were, but they may have contributed to my 'removal' problem. I will certainly put these in my 'easy breakfast book'! Thanks so much fro sharing, weekend cooker.
     
  4. Loved the cinnamon flavor in these muffins & my sweet tooth managed the sugar quite well! As with others who made the recipe however, I definitely didn't make it to the 18 indicated ~ Although a cup or two of raisins or dried cranberries would help stretch them out! [Made & reviewed in Zaar Stars tag]
     
  5. I tried these as written but added about a cup of raisins. I actually used the full amounts of everything and found they were really tasty and not really sweet at all. The cinnamon flavor was really nice and very moist muffins. I greased the muffin tins and everything came out great. But it only did take 18 minutes to be cooked. Thanks for sharing your recipe. ** I forgot to mention that these only made 12 regular muffins not 18.
