Christmas Morning Hash Brown Casserole

"I make this for Christmas brunch every year and it has become a family favourite. I love that you can prep it the night before and just pop it in the oven in the morning.  It can also be made without the ham for vegetarians."

  • Heat oil in skillet. .
  • Add hash browns, onion and green pepper.
  • Cook until veggies soften and potatoes begin to brown. .
  • Spray a 9x13 pan with Pam.
  • Spread potato mixture in bottom of pan.
  • Top with ham.
  • Pour eggs over all and season with salt and pepper. .
  • Gently stir to coat evenly with egg.
  • Sprinkle with cheese.
  • Cover with foil and refrigerate overnight. .
  • Bake, covered, for 25 minute at 375 degrees. .
  • Remove foil and bake 5 minutes longer.
