Chow Mein Ala Pencil Boy

"This is the only, & I do mean the only thing I can cook. I like to treat Gumboot Gourmet to a night out of the kitchen every once in a while & make her this, thankfully she loves it. Of course, I make her chop everything up for me, I wouldn't want to spoil her now, would I? I got this recipe from a Phillipino woman I worked with, she used to bring everything to work & make this for the office at lunch, so blame her if you don't like it! :)"

  • Heat your wok on high heat.
  • Add peanut oil, heat & then add chicken, stirfry till it changes colour.
  • Add garlic & onion, stirfry for a couple of minutes.
  • Add cabbage & carrot, stirfry for about 3 minutes.
  • Add stock, heat for a minute then add rice noodles.
  • Add steam fried noodles.
  • Add soy sauce & oyster sauce, clap the lid on & cook till noodles are tender.
  • Add sprouts if you have 'em, but you don't really need 'em.
  • That's it, easy huh?.
  • Easily made vegetarian as we have done on occasion. Just substitute veg stock for chicken & don't add any chicken, it doesn't lose anything without them.
  • Feeds the two of us for dinner if this is all we have otherwise with other things, it will feed 4.
