  • Place 8 graham crackers in bottom of 9x13” baking dish.
  • Mix vanilla pudding and 3 cups skim milk, let sit 2 minutes.
  • Gently fold in Cool Whip.
  • Pour half of vanilla pudding on graham crackers.
  • Top with another 8 graham crackers.
  • Pour remaining vanilla pudding over graham crackers.
  • Top with last 8 graham crackers.
  • Mix the chocolate pudding mix with 1 1/2 cups skim milk, let sit 2 minutes.
  • Spread over graham crackers.
  • Let sit overnight in refrigerator to soften the graham crackers.

  2. Audrey, Audrey, Audrey! WOW..... This was a smash. I just hate that I didn't get to take a pic of it. But with 3 granddaughters helping me and a 7 month old in the background, just didn't have the snap. I made this for a crawfish boil my son and girlfriend had. There were about 50 College graduates there and let me tell you. It was devoured. They could not believe it was a diabetic desert. And my son, whom is a diabetic, was delighted. It was a great hit, and I for sure will make this wonderful and easy desert again, and again. Oh! And BTW.. I didn't get the first piece. hehehe.. But there will be a next time. Thank you Audrey, Huggs.....

  4. This was almost as good as the full-calorie version. My guests had no idea how low cal/low fat it was. Yummy -- I figured it is about 132 calorie per serving if you cut 18 pieces.

I am a mother of three and live in central Pennsylvania. My children were very active in after school activities and found we weren't spending anytime together at meal time. In 1998, I decided to start cooking my dinners in a crockpot so that we could have a home cooked meal together once everyone came home. My children now get so excited to see what we are having to eat and love the smell when they walk in the door. My family calls me the crock pot queen. LOL I use my crock pot everyday of the year. <br> <br>My three children are now in college and before they come home they request their favorite meal. I still continue to cook in the crock pot for my husband and I. It is nice after a long day to know your meal is ready. It also helps in keeping my grocery bill down. With zaar, I can print my shopping list and that is all I purchase is the ingredients on that list. <br> <br>Now, my two daughters have been crock pot cooking while in college. They find it is easy to cook for the themselves and their friends. It is an easy way to have friends over for dinner after classes <br> <br>I still love trying new recipes and purchasing cookbooks, especially crock pot cookbooks. <br> <br>Happy Cooking!
