ingredients
- 4 chicken breasts
- 4 slices prosciutto
- 3 tablespoons olive oil
- 2 large leeks
- 2⁄3 cup white wine
- 2 cups vegetable broth
- 4 leeks, to serve
directions
- Set the oven to 350°F Wrap each chicken breast with a slice of prosciutto.
- Cut the leeks in half from top to tail, straight down the centre and separate the layers into ribbon like pieces.
- Heat the oil in an ovenproof frying pan and fry the chicken breasts on all sides until golden. It doesn't need to cook through - you just want to seal the outside. Remove the chicken and set aside.
- Add the wine and broth to the pan and poach the leeks until soft but not falling apart.
- Allow them to cool slightly, and then wrap the strips of leek around the chicken.
- Return the chicken to the pan, place in the oven and cook for 20 minutes.
- Serve immediately with extra leeks on the side.

I live in Manchester, UK with my fiance and young son. I work at the local hospital in pediatrics and love my job. I also love cooking!! I have a sweet tooth but try and make healthy family meals, I'm not against some lovely treats now and then though :)
