Chicken Sesame Bites

ingredients
- 2 whole chicken breasts
- 3 tablespoons lemon juice
- 2 tablespoons soy sauce
- 1 tablespoon sugar
- 1 tablespoon sherry wine
- 1⁄3 cup butter or 1/3 cup margarine
- toasted sesame seeds
directions
- Cut chicken breasts in 1-inch pieces and place into a shallow dish.
- Combine lemon juice, soy sauce, sugar and sherry. pour over chicken and marinate, refrigerated, at least 30 minutes.
- Remove chicken from marinade and saute in butter 5 minutes. Dip in sesame seeds. Serve with wooden picks.

Since I was planning to reheat these in the microwave for a potluck, I followed the advice of the other reviewers and created a dipping sauce from the marinade using their directions to boil and reduced. These were a big hit and appealed to all tastes - kids and adults. Enough flavor to entice those like me who lead towards bold spice combinations yet simple enough (nor spicy) for those with simpler palates.

I made these using chicken tenders. I was rather low on sesame seeds, so I added just a few drops of sesame oil to the marinade to compensate. I cut back the butter to 3T, but easily could have cut it back further using my nonstick skillet. I too boiled the marinade and thickened it with cornstarch to make a dipping sauce, and we all really liked that. Thanks Janice, for an easy and tasty weeknight meal. Made for ZWT4.

I hated to cook when I was young and did not really have a passion for it until I married my husband 13 years ago. He's a Mikey - will eat just about anything so he is a lot of fun to cook for. It is hard to say what my favorite cookbook is. I have the standard Betty Crocker that is about 30 years old and so beat up. But it is great for the basics. I love Taste of Home and other cooking magazines such as that. I tend to spend my time reading recipes, clipping them out and then storing them in a notebook according to category to be tried at a later date.
