Chicken Pesto Pasta

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Heat oil in a large skillet over medium heat. Saute garlic until tender, then stir in chicken. Season with red pepper flakes. Cook until chicken is golden, and cooked through.
  • In a large bowl, combine pasta, chicken, sun-dried tomatoes and pesto. Toss to coat evenly.

  1. This was great. I used homemade pesto. I dredged the chicken in flour before frying it, and that made it really yummy. I only used about 1/2 to 3/4 of the pasta because that's how I liked the proportions. I used some homemade oven-dried cherry tomatoes for the tomatoes. Next time I'll probably add a little more red pepper flakes. Definitely a keeper!

I live in Houston, TX, and have a husband who loves to eat. Just as well, since I love to cook. I enjoy looking for and trying out new recipes from various cookbooks, the internet, and the Food Network. Bless Rachael Ray - I just love her 30 minute meals. We have a motor home, and enjoy traveling with our two dogs and finding interesting places. Our favorite is the Texas Hill Country (Lake Travis in Austin is great, and Fredericksburg). We also enjoy the Port Aransas area on the southern coast. My husband and I are currently following the Body for Life program, and their Eating for Life cookbook is one of my mainstays. Some of the recipes you see me post will be from here. But eventually, you get tired of eating the same things and have to look elsewhere for inspiration. Including snacks, we eat 5-6 times per day, so I need a lot of inspiration. This site has been very helpful with that. I am looking forward to finding more delicious, healthy meals to cook.
