Chicken Enchilada Dip

"I found this dip on another site. I usually plan ahead and grill extra chicken a day or so ahead. However, the purchased grilled chicken would work just as well. Cooking time does not include preparing the chicken."

Ready In:




  • Place shredded chicken in a medium bowl, and mix in cream cheese, mayonnaise, shredded cheese, green chile peppers and jalapeno pepper.
  • Transfer the chicken mixture to a medium baking dish.
  • Bake uncovered at 350 degrees for 30 minutes, or until the edges are golden brown.
  • ***NOTE***I season the chicken with my favorite spices prior to grilling.
  • Fajita seasoning or Montreal seasoning work well.
  • The purchased grilled chicken would save a step, also.
  • I have added more or less jalapeno depending on the tastes of those I will be serving it to.

    Can this be made in a crock pot? Having a Taco 2's Day party on 02/22/22 and this would be perfect for it!

    I have made this several times. It is great. Recently I doubled the chicken, added chipotle in adobo and a bit of red enchilada sauce and stuffed in flour tortillas. Baked in a casserole dish topped with shredded cheese and more enchilada sauce. It was a hit.

    I’ve made a similar dip which is delicious, and I’m sure this will be as well. Question: The servings info is listed as 25. Is that accurate? If so, I’ll need to halve as I’m planning to serve to a much smaller group. Thanks so much!

    The recipe sounds delish. My question is what makes it Enchilada? I don't see that sauce or ingredients.

    i have made tnis recipe soooo many times, i love it and so do my friends. u can also tweak it to make chicken enchlidas. its so good. and addicting. if u havnt tried this, u must, its very easy to make, u can even use a roasted chicken, my favorite roasted chicken is from costco. if u want to shorten the shredding time too. but that part is up to you. both ways are easy and good
