Chicken Confetti

- 4 -5 lbs cut-up chicken
- 1 teaspoon salt
- 1⁄8 teaspoon pepper
- 1⁄2 cup salad oil
- 1⁄2 cup onion, chopped
- 1 garlic clove, minced
- 2 (16 ounce) cans tomatoes
- 1 (8 ounce) can tomato sauce
- 1 (6 ounce) can tomato paste
- 2 tablespoons snipped parsley
- 2 teaspoons salt
- 1 teaspoon basil
- 1⁄4 teaspoon pepper
- 8 oz spaghetti, cooked and drained
- grated parmesan cheese
directions
- Wash chicken pieces and pat dry. Season with 1 teaspoon salt and 1/8 teaspoon pepper. In large skillet or Dutch oven, brown chicken in oil; remove chicken.Pour off all but 3 tablespoons of the fat. Add onion and garlic; cook and stir until onion is tender. Stir in chicken and remaining ingredients except spaghetti and cheese.
- Cover tightly, cook chicken slowly, 1 - 1 1/2 hours or until tender, stirring occasionally and adding water if necessary. Skim off excess fat.
- Serve on spaghetti; sprinkle with parmesan cheese.

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
