- 1 cup heavy cream
- 1 cup pancake syrup
- 2 eggs
- 3⁄4 cup whole wheat flour
- 3⁄4 cup all-purpose flour
- 1⁄2 cup firmly packed brown sugar
- 3⁄4 teaspoon salt
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 1⁄2 cups rolled oats
- 1 cup broken walnuts (optional) or 1 cup pecan pieces (optional)

- Preheat oven to 350. Grease muffin tins,.
- In a large mixing bowl, combine cream, syrup, eggs, flours, sugar, salt, baking powder, baking soda, and oats and beat with a whisk. If adding nuts, stir them in now.
- Fill the muffin tins 3/4 full.
- Bake 20 minutes, or until fork comes out clean.
