Cheese Onion Soup

ingredients
- 1 onion, chopped
- 4 ounces cheddar cheese
- 1⁄2 tablespoon mustard
- 550 ml milk
- 1 tablespoon plain flour
- butter
directions
- Cook the onion in a pan with a small bit of butter until soft. Stir in the flour to create almost a roux for a minute or so.
- Stir in the milk, a little at a time, and then bring up to boiling point. Add the remaining ingredients and wait until the cheese has hit melting point. Taste and season accordingly, serve warm with bread.
- (I only need to add pepper).

It is a cold rainy day here, so I needed something to warm my belly for lunch. This is a nice and easy to prepare soup. I found that the cheese curdled but I think that is because the directions say to add the cheese when the soup is at boiling point. Had I added it earlier, I don't think that would have happened, so next time I shall add the cheese before the soup boils. I added a dash of garlic powder and some salt and pepper and I assume that the "mustard" referred to dried mustard so I used that too. All in all, this is a good recipe and I will make it again. Thx.

Hi, I'm quite new to recipezaar but I have a couple of recipes I would love to share.
