- 1 lb sharp cheddar cheese, shredded
- 1⁄2 cup unsalted butter, softened
- 2 teaspoons Worcestershire sauce
- 1 1⁄2 cups all-purpose flour
- 1 teaspoon paprika

- Preheat oven to 375°F In a large bowl, beat cheddar, butter and Worcestershire sauce until smooth. (You could probably do it in a food processor, too, but I haven't tried that.).
- Whisk together flour and paprika. Beat into butter mixture with a wooden spoon; it will be VERY stiff.
- Pack dough into a cookie press and press out onto an ungreased, unlined cookie sheet (there is more than enough butter in the dough to prevent sticking). You can pack them close together, as they will not spread. If you don't have a cookie press, form walnut-sized balls and press flat with the bottom of a glass. Alternatively, roll dough out on the UNDERSIDE of a cookie sheet to about 1/4" thickness. Cut into shapes (squares, rectangles, diamonds) with a knife or pizza wheel before baking.
- Bake 10-15 minutes depending on size. They should be lightly browned on the edges and firm in the centers. Transfer to a rack to cool. Best eaten the day they're made, but can be stored in airtight containers up to a week.

I lost 160 lbs (though I've gained back about 60 of that since). I can't eat as much as I used to, so I want every bite to be extra good!
