  • Cook the bacon in a 4 quart soup pot over low heat until crisp. Add the diced carrots, celery and onion and saute until the onion is translucent, about 5 minutes.
  • Add the chicken broth and cauliflower and simmer until the veggies are all tender, breaking up the cauliflower with the metal spatula, if needed. Add the whipping cream, return to simmer, and serve hot.
