Cashew Chicken

- 1⁄2 cup catsup
- 4 teaspoons soy sauce
- 1⁄2 teaspoon salt
- 2 tablespoons Worcestershire sauce
- 3 tablespoons sugar
- 1 1⁄2 teaspoons sesame oil
- 1⁄4 teaspoon cayenne pepper (more to taste)
- 1⁄2 cup chicken broth
- 2 tablespoons cornstarch
- 1⁄2 teaspoon sugar
- 1⁄4 teaspoon salt
- 3 whole chicken breasts, cut into bite size pieces (or chicken tenders)
- 1⁄4 cup cooking oil
- 2 tablespoons fresh gingerroot, minced
- 1 tablespoon minced garlic
- 1 onion, chopped
- 2 carrots, sliced thinly
- 1 green bell pepper, chopped
- 2 cups snow peas
- 1 1⁄2 cups cashews
- 2 cups cooked white rice
directions
- Combine Catsup, soy sauce, salt,Worcestershire Sauce, sugar, sesame oil, cayenne pepper, and chicken broth and set aside.
- In a bowl, combine cornstarch, sugar, and salt.
- Toss the chicken with cornstarch mixture.
- Heat a wok or frying pan to a high heat and add cooking oil.
- When oil is hot add chicken.
- Add gingeroot, garlic and onion.
- Stir fry mixture until chicken is cooked through and opaque.
- Add bell pepper and carrots, stir fry until tender crisp about 2-3 minutes, then add snow peas.
- Continue to stir fry until tender crisp.
- Add catsup/soysauce mixture to chicken and vegetables and cook until it comes to a boil.
- Add the cashews and serve immediately over a bed of white rice.

A truely outstanding dish!! I did make a few changes with what I had on hand- I substituted canola oil for the sesame oil, reduced the garlic to 1/4 tbsp and ginger to 1/2 tbsp and used 2 breast pieces instead of three. Even with all these changes this dish was truely outstanding. My dad wouldn't believe that it was homemade! Thank you so much Dawn for a superb recipe!!

I was a little leary at first, catsup and 2 TBSP of Worcestershire sauce.....but....it turned out quite good. I used a yellow pepper - we can't eat green and I did cut the oil back to 1 Tbsp instead of 1/4 cup -it seemed like alot to me. I also cut the cashews to 1 cup and used 1 tsp of red pepper flakes instead of cayenne pepper. I used only 2 whole breasts as well. It was alot of food - made 6 servings. We did enjoy this very much. I?m ?originally from Texas, but now live in Florida. Still gotta have that spice though....love chipotle peppers, habaneros, and jalapenos. This is a picture of myself & my 2 daughters taken in Dec'06. I am working on my graduate degree, & still work as a nurse prn. When I'm not cooking and eating what I cook... I head for the gym to work out. As far as cookbooks, I love the church/ community cookbooks, where someone has dug out old handwritten recipes by granny and shared them with others-those are the best kind. If I had a month off, I'd for sure go hiking, would love to visit Australia and New Zealand.?
