- 1 cup shredded carrot
- 1 onion, diced
- 1 tablespoon unsalted butter
- 1 cup long grain rice, uncooked
- 1 (14 1/2 ounce) can vegetable broth
- 1 teaspoon lemon pepper seasoning
directions
- In a large skillet, saute carrots and onion in butter until tender. Add rice and stir to coat.
- Stir in broth and lemon pepper. Bring to a boil. Reduce heat. Cover and simmer for 20 minutes or until rice is tender.
